Sadly, I was sick this morning with a fever after getting drenched last night... :(
Skipping work in the morning to recover, I decided to make curry ahead for dinner because 1) my boyfriend was coming over and I wanted him to taste something else and 2) my dad might like it (we were supposed to go out but meh).
I started out by chopping onions and defrosting pork (clearly thinking of cooking stew) but next thing i knew I was already making curry.
So here is my curry recipe for your enjoyment :D
Curry a la whatever (easy, fast, moron proof)
1/2 kilo of any meat you might find (pork, chicken, beef) cubed
1 knorr/bullion of the meat you are using
1/2 cup of kikoman soy sauce/ regular soy sauce
1 small ginger (slice and crush)
1 big onion (chopped)
3 garlic cloves (w/o skin and chopped)
1 cup milk (evaporated/fresh)
2-3 big potatoes and carrots (peeled and diced)
salt & pepper to taste
CURRY POWDER (red/yellow- I use yellow)
Basil or any herbs (not marijuana) you might like to add (eg paprika, saffron, thyme, rosemary whatever you like)
Heat some oil in a deep pan, then add the onions. Wait for it to look white-ish then add your garlic. Add your meat (i used pork), then sauté' (fancy word for mix the meat inside the pan around), then salt and pepper this baby. Then in goes the veggies until the thing looks wet-ish.
After, add the soy sauce and 1 cup water. Wait for it to boil then throw in the knorr (pork)cube. Let it boil until the meat is soft. throw in that ginger and wait for it to boil some more (add water until the meat is tender)
Basically, you now have a stew so its time to add the herbs that you like (i put in basil and paprika and a dash of lemoncito)
Wait 5 mins then add the curry (2-3 tablespoons)
then carefully mix the stew until the whole thing turns an even yellow/brown.
Finally when it starts to bubble add that 1 cup of milk slowly, then mix it until well heated in.
Salt and pepper if you want to make it a little bit more salty or spicy.
TADAAAA! you have curry!
This can feed 3-4 people. If you tend to eat a lot, then maybe just 2 people.
Best served with hot rice and any fruit shake (like avocado..mmmmmm)
We had leftover chicken afritada and some tuna so it was a pretty good meal. SO AWESOME.
